Step 1
Drain the silken tofu very well. Blend until completely smooth. Add potato starch to the tofu and mix until a shaggy dough forms. If the dough feels dry,, add water a little at a time until it becomes smooth and pliable. Cover and rest for 5 minutes to let the starch hydrate.
Step 2
Roll the dough into small bite-sized balls. Keep covered to prevent drying.
Step 3
Bring a pot of water to a rolling boil. Add the tofu balls and cook for about 4–5 minutes or until they float
Step 4
In a bowl, add chilli powder, garlic, sesame seeds, and scallions. Heat the oil until hot, then carefully pour it over. Stir in soy sauce, sugar, and oyster sauce.
Step 5
Add the cooked tofu balls and toss until evenly coated. Enjoy!
