Step 1
Lightly brush each dumpling wrapper with sesame oil. Sprinkle a pinch of salt and white pepper over the surface. If using shrimp, place one or two pieces along one edge of each wrapper.
Step 2
Gently roll each wrapper into a cylinder, enclosing the shrimp if used. Place the rolls seam-side down on a heatproof plate lined with parchment paper or lightly brushed with oil to prevent sticking.
Step 3
Set up a steamer with boiling water. Place the plate with the rolls into the steamer and cover. Steam for 5 minutes or until the wrappers are soft, translucent, and cooked through.
Step 4
While the rolls are steaming, combine water, sugar, soy sauce, dark soy sauce, and sesame oil in a small saucepan. Heat over low heat, stirring until the sugar dissolves. Remove from heat.
Step 5
Carefully remove the steamed rolls from the steamer. Drizzle the warm sauce over the Cheung Fun.
Step 6
Serve immediately, optionally garnished with a little extra sesame oil orchopped scallion
