Step 1
In a bowl, whisk together the eggs, water, sesame oil, salt, and white pepper.

Heat a non-stick pan over medium heat and lightly grease with oil. Pour the egg mixture into the pan and cook until set, stirring occasionally to form scrambled eggs. Once cooked, remove from the pan and set aside to cool slightly.

Once the scrambled eggs have cooled, chop them into small pieces.
Step 4
Place a small amount of the egg mixture in the center of each Gow Gee wrapper. Fold the wrapper over to create a half-moon shape, pinching the edges to seal.
Step 5
Heat a little oil in the pan and cook the dumplings over medium heat until golden brown on both sides, about 2-3 minutes per side. Serve warm and enjoy!
