Ingredients

  • 2 tbsp bean sauce in red oil
  • 500g Evergreen Foods Lei Mein Noodles
  • 1 tbsp sesame oil
  • 1 tsp white sugar
  • 1 tsp chilli oil
  • Sliced beef (or your choice of meat)
  • A few slices of spam
  • Napa cabbage, chopped
  • 1 small carrot, sliced
  • 1 yellow corn, cut into pieces
  • (Adjust the sauce to your taste)

Method

Step 1
Cut the Evergreen Foods Hard Tofu into triangle pieces. Pat each piece dry with a paper towel to remove excess moisture for better crisping.

Step 2
In a bowl, mix cornstarch, salt, and white pepper. Lightly toss the tofu pieces in the mixture until evenly coated, then shake off any excess.

Step 3
Heat 3 tablespoons of oil in a large pan over medium-high heat. Add the tofu and cook for 2–3 minutes per side, flipping occasionally until golden brown and crispy. Remove and place on a plate lined with paper towels to absorb excess oil.

Step 4
In a bowl, mix panko crumbs, veggie floss, sugar, MSG, and white pepper. Set aside.

Step 5
Sauté garlic, chilli, and scallions in a pan for 30 seconds until fragrant. Add the seasoned panko mixture and cook for another 5 seconds, mixing well. Return the crispy tofu to the pan and toss gently to coat with the aromatic mixture.

Step 6
Transfer to a serving plate and enjoy immediately as a snack, side dish, or over rice.
