200g Evergreen’s Hard Tofu
200g Evergreen’s Chow Mein Noodles
2 tbsp soy sauce
3 tbsp cornflour
4 tbsp oil
1 tbsp sesame oil
1 onion, roughly chopped
1 red pepper, sliced
1 tsp Szechuan peppercorns
2 cloves of garlic, chopped
1 tbsp Sriracha
50g spring onions, roughly chopped
Step 1
Tear the tofu into pieces and pop it into a mixing bowl.
Step 2
Add a tbsp soy sauce, mirin, and cornflour into the tofu and mix it well until it's well-coated.
Step 3
Cover it with cling film and leave it to marinade for 20 mins. Meanwhile, cook the chow mein noodles for 2 mins.
Step 3
Heat a good amount of oil in a pan and cook the tofu over medium-high heat until it's golden all over.
Step 4
Once it's cooked, remove it from the pan and place it on a plate for future use.
Step 5
Stir fry the onion over high heat for a few minutes until it starts to soften, then add in the sliced red pepper, garlic, Szechuan pepper, and spring onions. Stir fry till they are slightly soft.
Step 6
Add the tofu back into the pan, then add 2 tbsp soy sauce and sriracha. Cook for one minute. Serve immediately with rice and enjoy.
